We work to foster connection and support conscious consumerism via the creation of thoughtful hospitality businesses. In our current reality of hyper-consumerism, waste, pervasive technology, and conflict, this is our form of activism — and our investment in the world as we want it to be.

HEATHER SPERLING - owner & founder

Before becoming a restaurateur, Heather spent a decade as an editor of food publications and a consultant for chefs, markets, and brands. Her culinary character is informed by her Lebanese heritage, a stint living in India as a child, and dozens of formative trips to Spain.

She is a founding member of Regarding Her, a national non-profit fueling the growth of women leaders in food and beverage. A love of food led her to become a restaurateur, but it’s a belief in the power and value of hospitality that keeps her going.

PIERLUC DALLAIRE - director of operations & beverage director

Pierluc is a 20-year hospitality veteran who worked in Montreal institutions — including the beloved Joe Beef — before relocating to Los Angeles to help open Botanica. In addition to Botanica and Bar Besito, Pierluc developed and ran the short-lived but much-acclaimed Bar/Restaurant in Los Feliz from 2019-2020. He is a wine savant, an events wizard, a tech & systems whisperer, and a floral superstar, running a floral design company — Western Buttercup — on the side.
